Step one: import existing reviews
If you had a store on another platform or sold through Instagram, you have genuine reviews that should not be lost. Export them as CSV from the old app (or gather them manually from messages with the customer’s permission), and make sure each row contains: the Shopify product identifier (handle or ID), customer name, rating, text, date and photo if any.
